rec1 ①Place 1 bag (200g) of noodles in a large amount of boiling water (2 liters or more).
rec2 ②Boil over high heat, Keep stirring regularly to avoid over boiling, for about 5 1/2 minutes.
Please turn off the heat when you have reached your desired degree of firmness.
rec3 ③After boiling, the soba noodles are transferred to a colander and rinsed immediately.
rec4 ④Quickly rinse with water to remove slime.
rec5 ⑤Finally, cold water (preferably ice water) will tighten the noodles.
Drain thoroughly and serve.
*For warm soba noodles
Dip the cold soba into boiling water and serve with warm dipping sauce.
rec6 ⑥Please consume as soon as possible.
rec7 ⑦You can drink boiled water from buckwheat noodles as sobayu (buckwheat water).
The “nutrients” and “thickening” of the soba will accumulate at the bottom of the pot, so please discard the top clear part of the boiling water and enjoy the thicker, thicker part.
